A couple weeks ago I harvested the tomatoes, peppers, and garlic I had grown in the garden. I purchased the onions, cilantro and lemon juice and got to work making salsa!!! There's nothing better than home made salsa!!! Truly!!!
Don't those ingredients look beautiful!!?? I don't use any pesticides or fertilizers or anything. Just the rain, the well water, and the gorgeous sun!!
Here's the information I found that has the recipes and the how-to-can information!! It is a tedious project, lots of work preparing the ingredients. The canning process is simple, just follow the instructions!!!

I ended up getting 14 pints of salsa. YUMM!!! A friend of mine made and canned 50 pints!!! WOW! That is a lot of work but what a wonderful winter they will have with all that home-made Salsa!!!
Next year I am going to try and grow onions. I've never been very successful at it, but it is still worth trying!! I am also going to grow my own cilantro. Then I will just have to purchase the lemon juice which is vital to ensuring my salsa is safe!!!

Let me know how you like it. Most Texans I know are picky about their salsa and I haven't found a canning recipe that people really like. I usually just make pico instead.
ReplyDeleteWe had a small bowl leftover to snack on and it was good. Very fresh but not hot enough. I am hoping that it will heat up a bit with time. If not, next time I will add more hot peppers.
