I know, it's really hard to believe but it is true!!! This is a tasty, no cholesterol egg salad!!! So yummy.
Did you know that egg yolks have 186 mg of cholesterol in them? If you have heart disease, your daily maximum intake of cholesterol is 200mg. So, one egg is almost the limit of cholesterol for one day!!! WHAT??? Truth!!
The solution is to get rid of that egg yolk!!!! (And while you're at it, get rid of the mayo too.) Yep, toss it or give it to someone who can eat them!!!
So, on to the reason for this recipe. I LOVE EGG SALAD but have discovered just recently that I have Coronary Artery Disease. My diet is now limited on the amount of cholesterol I can take in.
I thought about it for a bit and came up with this recipe and I love it!!
Cholesterol Free Egg Salad
7 hard boiled eggs-peeled-roughly chopped after removing egg yolk (discard the egg yolk)
3 tbsp hummus
2 tbsp dill relish
1 tsp mustard
1/4 tsp pepper
Adjust ingredients to your own personal taste
Add all ingredients to your food processor and blend until almost a paste but still slightly chunky. Because you aren't using any mayo and have no yolks you need to blend it more so it sticks together well and doesn't fall off your sandwich. I used my homemade hummus when I made it and it was so good. That way, you can also control the amount of salt in it. Which by the way is another no no for people with heart disease.
With this recent change in my diet, and adding in exercise, I have successfully dropped my cholesterol down from 291 to 166.
